Recipe: Baked Pluot Oatmeal Bars

Serves: 6

Ingredients:

10 tablespoons Rolled oats

just shy of one cup of Greek yogurt

4 tablespoons Date Paste (check instructions below)

2 Plutos, sliced 

Pinch dried mint (optional)

Method:

To make the date paste, you need 1/4 dates soaked in hot water, then blend them.

Mix oats with date paste, and spread it in an oven safe baking dish.

Bake oats for 5 minutes so it will harden a bit, and it won't be messy when you add the yogurt.

Spread the yogurt over the oats.

Cut the pluots in the way you like and arrange them to cover the yogurt, and sprinkle dried mint over. (You can add more pluots if you like). 

Bake for 25 minutes at 400 F, you can broil for 3-5 min for a crunchy top. Serve warm or cold.
