Recipe: Winter Salad
Recipe from Mario Hernandez.
2 Kiwis, with skin, removed and cut into quarters
1 Tarocco Blood Orange, with skin and seeds, remove, cut into eight pieces
1 Navel Orange w/skin and seeds removed, cut into eight pieces
1 Page Mandarin, skin and seeds removed, cut into disks
Toasted pumpkin seeds to taste
Tajin seasoning to taste
1/ 4 cup of crème fraiche
Quality honey to taste
Lime juice to taste
Olive oil to taste
In a small mixing bowl, place the crème fraiche and add lime juice, honey, kosher salt, and freshly ground black pepper to taste. On a large platter, place the ingredients to your liking. Drizzle with the crème fraiche dressing, olive oil and season with Tajin, kosher salt and freshly ground black pepper to taste.
Serve at once.
