Pork Chops with Peach & Lime Slaw

2 bone-in pork chops
2 TBS butter

4 medium peaches
3 slices red onion diced
juice of 1 lime
2 TBS extra virgin olive oil
2 TBS cilantro leaves, torn
9 mint leaves, cut into ribbons

Preheat the oven to 350F

To prepare the slaw slice peaches in wedges about 1/4 inch thick.  Then slice the wedges into matchsticks. Place the peaches into a medium bowl and add the rest of the ingredients. Toss gently and let stand while you prepare the pork chops.

Sprinkle both sides of the chops with salt and pepper.  Over medium-high heat melt the butter in an ovenproof skillet large enough to hold the chops.  Sear the chops on each side until brown about 3 minutes per side.   Place chops in the oven and bake for another 5-7 minutes until the internal temperature reads 145 F with a meat thermometer. 

Serve the chops with the slaw beside and enjoy.
