Recipe: Peaches and Cream Popsicles


4 large or 8 small peaches
1 cup of water and more for boiling
1/4 cup granulated sugar
juice of 1 lemon
5 TBS heavy cream


In a medium saucepan bring enough water to boil to cover the peaches. Once boiling, plunge the peaches and leave them in the water for about 2 minutes. Remove from the water and peel off the skins. (You can skip this step if you don't mind little bits of skin in your popsicles). 

Cut the peaches into chunks and remove the pits. Place the 1 cup of water, lemon juice, and sugar into a wide saucepan and bring to a simmer. Simmer until all of the sugar has dissolved, then add the peaches to the pan. Simmer for another 5 minutes or until the peaches are tender.  Remove them from the heat and let them cool to room temperature. 

Put the peaches and syrup mixture along into a food processor and blend until it becomes a smooth puree.  Mix in the cream or pour about 1 tsp into each popsicle mold.  Spoon the peach mixture into the molds, leaving about 1/4 inch on the top for expansion during freezing. 

Place molds and sticks into the freezer until completely frozen.
