Recipe: Fennel & Apple Salad with Orange and Lemon


2-3 bulbs fennel
1 apple
1 lemon, juiced
1/2 valencia orange, juiced
4-5 TBS extra virgin olive oil
good quality salt to taste


Slice the fennel bulb thinly.  If you have a mandoline, use it for the fennel. Peel (if you wish) and cut the apple into matchsticks and place in a bowl.  In a small bowl whisk together the orange and lemon juice with the olive oil.  Toss the dressing with the fennel and apples and salt to taste. Serve garnished with fennel fronds.
