Recipe: Early Winter Salad of Pink Ladies, Warren Pears, and Belgian Endives



1 Warren pear, cored, de-stemmed and sliced thin

1 Pink lady apple, cored, de-stemmed and sliced thin

1 Belgium endive, leaves separated and cut diagonally into 

1.2 inch slices

6 dried peaches, cut into thin slices

Aged quality cheddar cheese to taste (we used a vegetable peeler to get bigger slices)

Olio Nuovo to taste

Lemon juice or quality white vinegar to taste

Kosher salt and freshly ground black pepper


In a large mixing bowl, mix the ingredients, using a large rubber spatula or your hands.

Dress and season to taste. Garnish with slices of aged cheddar cheese. Serve at once.
