Recipe: Fruit Compote

A special thanks to CSA member Shannon hughes for this delicious and forgiving way to enjoy the last of the week's fruit.


Any desired fruit (pears and apples are great, but really anything works)

1/2 cup fruit juice (orange or apple work well)

3 pinches cinnamon (or cinnamon stick)

1 pinch cardamom (or cardamom seed)


Peel and cut up fruit - usually various pears, apples. Put all of the cut fruit in a medium saucepan with a 1/2 cup of fruit juice. Add cinnamon and cardamom into the saucepan. Bring to a boil and then reduce heat to low. Simmer for roughly 30 mins and add more juice as needed if the fruit has not reached your desired texture.

After cooking, the compote will be ready to serve immediately or store in the fridge. It's awesome on its own and incredible over yogurt; Straus' full fat vanilla is the Hughes families favorite.
